“六月黃”也就是大閘蟹的寶寶,大閘蟹一生中會有10多次的蜕殼。每次蜕殼代表着每一次的成長,“六月黃”是大閘蟹進入成熟期前的最後一次蜕殼,亦是大閘蟹從“少年”步入“青年”的中間階段。
等到七、八月份褪殼成長,就能成熟為壯碩的大閘蟹。因此,“六月黃”又稱為“童子蟹”,體重一般在3-4兩左右,具有外殼脆、內殼軟、肉質鮮嫩及重皮的特質。
煮法-清蒸
先用冰水漫洗干淨,蟹肚向上,落少許鹽,把紫蘇葉放入水中,水滾後隔水蒸 :
100-90頭-15分鐘(明火計),焗蟹二分鐘
